Hey fellow mamas, we feel you. The daily struggle of getting vegetables into kids who act like anything green is poison — especially when allergies make things even trickier. We’ve all had those nights where dinner turns into plain rice and nuggets again, followed by that guilty sigh.
After years of trial and error, we’ve found a few things that actually help. Smart prepping, sneaky hiding tricks, and tools that make life simpler have turned our kitchens from chaos to (mostly) manageable.
Hidden Veggies Are Our Secret Weapon
Picky eaters can spot a pea from a mile away, so we chop finely and disguise. Bok choy, spinach or kai lan get minced small and mixed into mince, sauces or even toast toppings. Never announce what’s inside — if they ask, it’s just “flavour.”
Batch Prep Without the Headache
Prepping ahead saves us on busy days. We cook once and portion for the week. The real game-changer? The handy, stackable, fuss-free lightweight MealPrep™ stainless steel bowls by Fresh Pantry™.
These bowls are lightweight (even our little ones can help carry them), they stack neatly to save fridge space, and they’re so easy to clean. We use them for chopped veggies, marinated meats, and ready-to-go mixes. Grab, cook, serve — no more digging through mismatched containers. They’ve made batch prepping way less stressful.
Keep It Simple and Familiar
We stick to a few repeatable recipes and tweak them with hidden veggies. Involving the kids in stirring (straight from the Fresh Pantry™ bowls) sometimes helps them feel part of it without the pressure to try something totally new.
Quick & Easy Recipe: Hidden Veggie Minced Pork on Toast
This is one of our favourite sneaky wins — crispy, tasty, and the kids devour it without realising they’re eating greens.
Ingredients (serves 2–3 kids):
- 300g minced pork
- 1–2 tsp mushroom seasoning
- Pinch of salt
- 1 tsp sesame oil
- 2–3 stalks bok choy, finely chopped (the hidden star)
- 4–6 slices white bread
- 1–2 eggs, beaten
- Oil for pan-frying
Method:
- In a Fresh Pantry™ MealPrep™ bowl, mix the minced pork with mushroom seasoning, salt, sesame oil and the finely chopped bok choy. Let it sit for 10–15 minutes (or prep earlier and store in the fridge).
- Spread a thin layer of the mixture onto each slice of bread.
- Dip the topped bread into the beaten egg (or brush it on top).
- Heat oil in a pan over medium heat. Fry pork-side down for 5-6 minutes until golden and cooked, then flip to crisp the bread.
- Cut into fingers or fun shapes and serve warm.
Tip: Prep the mince mixture in advance in your stackable bowls and dinner is ready in under 15 minutes on hectic nights.
We’ve got this!! xoxo
